A few details about each of the route are given below.
Angel of the North to Pelaw Metro

The route starts at the Angel of the North, takes one along a section of the Bowes Railway path, down part of the Bowes Incline, to the Whitehills Nature Park and Viewpoint, through the Windy Nook Nature Park, and finally along an old wagon way to Pelaw Metro
The Angel of the North is not at a Metro Station! However it is easily accessible from Gateshead Metro Station. At the station interchange go to Stand L and take the GoNorth East 'Angel 21' service towards Chester le Street and Durham. Get off at the Angel of the North stop. The journey time is approximately 13 mins. An adult fare is usually £2.50.

Unfortunately there are no obvious refreshment stops
Bank Foot Metro to Metro Centre

The walk starts at Bank Foot Metro Station, then along Newbiggin Dene, through part of the Newbiggin Estate, through East Denton to Denton Dene, across the Tyne at Scotwood, and then along the south bank of the Tyne to the Metro Centre.
Not quite a Metro to Metro walk as there is no station at the Metro Centre. However there are regular shuttle buses to both Gateshead Interchange and Newcastle City Centre
There are plenty of refreshment places when you arrive at the Metro Centre
Bede Metro Station to Wallsend Metro Station
9.8 km / 6.1 miles
The route starts at Bede Metro Station and goes via the Bede Museum site (with cafe), through the pedestrian tunnel, to the harbour at Willington Quay, along Willington Gut to the old Memorial Hospital and finally onto Wallsend High Street and Wallsend Metro Station.
As will as the cafe at Bede Museum there are refreshment opportunities at the end in Wallsend.
Brockley Whins Metro Station to Howdon Metro Station
9.4 km / 5.8 miles
After leaving Brockley Whins the route follows The Way of Learning (was Bede's Way) to the Bede Museum site (with cafe). The Way of Learning here actually follows the route of the River Don and crosses the entrance to the Tyne Tunnels. After passing under the Tyne in the Pedestrian Tunnel the route climbs up through Howdon to Howdon Metro Station.
Other than the cafe at Bede Museum, there are no obvious refreshment stops
Gateshead Stadium Metro Station to Metro Centre
7.2km / 4.5m
Starts through newly redeveloped areas of Gateshead centre with chance to see their combined heat and power plant, their mine water heat exchanger and their solar farm
After this generally follows the route of the Keelman's way.
Refreshments at the Staiths and the Metro Centre
Hebburn Metro Station to Central Station Metro Station
9.5km /6 miles
Follows the south back of the Tyne: along the Keelman's Way
Plenty of refreshment places near Central Station
Kingston Park to Haymarket

Refreshments available at Exhibition Park Café or near Haymarket
The route can be easily modified to avoid climbing Cow Hill.
Monkseaton Metro Station to South Shields Metro Station

7.4km / 4.6 miles
Follows less used paths through Jesmond Dene and Jesmond Vale to near the mouth of the Ouse Burn then passes through Ballast Hill Cemetery, St Laurence Park, Hoult's Yard and Byker housing.
Generally good paths except for Jesmond Dene north of Castles Farm Road
Refreshments at Hume Street: The Kiln; Brinkburn St Brewery and others.
South Hylton Metro to Sunderland Metro
